I have been very disappointed lately with the non-stick coating on muffin pans. I have tried many over the last year (including Kitchen-aid, Bakers Secret, Wilton and others), and the muffins start sticking badly after about 15 uses. I am very careful in how I care for them, hand wash, no metal utensils, etc. But with the other pans I have tried the initial coating which is shiny seems to disappear quickly and then the muffins start sticking. I make muffins about four times a week and I have been using this pan for eight weeks and it is still working well. The product description says that this pan is coated inside and out with xylan. But it seems to me that the top surface of the pan has a different coating than the bottom. The top is silver and the bottom is gray. The bottom has developed scratches in it already, but I really don't care as long as the top (and inside the cups) stays intact, which it has. The only thing I do to care for it is to hand wash it fairly soon after it has cooled. And so far, the non-stick properties are performing well. By the way, this pan makes the large "Texas" size muffins.
Here is an update: after five months the silver coating is peeling. I am very disappointed. I use it about three times a week and I am very careful in cleaning and handling. It was good while it lasted, but I don't consider 5 months long enough. Shouldn't it last at least a year?!
