(More customer reviews)Nordic Ware discontinued the regular version of this mini bundt pan - you won't find it anywhere - but this one, tho expensive, is even better! It's commercial quality thru and thru, so you won't be seeing the nonstick coating wearing thin, for instance. We literally wore out the lighter version, but such sticker shock when we saw this one! Do not hesitate like we did - it is well worth the price and the seller (BakeDeco) is just great - very helpful, ships promptly, packs it well, no damage.
One thing, tho, we notice this pan is hotter than the old, thinner Nordic Ware one, so adjust your oven temp down and watch the cakes, the first time you use it. Ours baked a lot faster. This pan would be an excellent gift because of it's quality.
We heat the pan while the oven is heating and spray the HOT pan well with olive oil spray - Mothers is best we ever found - MOTHER'S Olive Oil Pan Coating , 6-Ounce Units (Pack of 4) - heating the pan first opens its pores and makes it truly nonstick. (In fact, pan release spray seldom works on a cold pan, even a skillet should be heated first.)
Then spoon 1/2 cup of batter into each mold and bake as usual. (We use 350 degrees for 22 minutes.)
After you dump out the cakes, slide the HOT pan into a sink of soapy water to soak a few minutes. Then just BRUSH OUT each mold with a soft brush. (NEVER SCRUB!) The PERFECT brush for this is: Way Clean 33030 Bottle Brush!! LAST, set the pan in the still warm oven to DRY for the next time. So easy!
BTW if you nest these pans when they are not clean, gunk gets shoved up into the center stem, which then has to be removed with Qtips, or it burns and smells when you bake. So, don't nest them unless clean and dry.
